Pumpkin Muffins Recipe
This pumpkin muffin recipes make moist delicious muffins dusted with confectioners' sugar and flavored with a hint of cinnamon.
2 cups granulated sugar
1-1/2 cups grapeseed oil
1-3/4 cups pumpkin pureé (fresh or canned)
3 cups all purpose flour
1 Tablespoon cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoons salt
Preheat oven 375F.
Line a muffin tin with muffin liners.
Beat together eggs, sugar, oil, and pumpkin puree until smooth.
Whisk together flour, cinnamon, baking powder, baking soda and salt. Add mixture to pumpkin mixture, mix till its well incorporated.
Pour batter into prepared muffin tin, filling each one 2/3 of the way. Bake for 15 - 20 minutes, or until an inserted toothpick comes out clean, let cool. Once cool enough to touch turn cupcakes out of pan and let cool completely on a wire rack.
Dust muffins with confectioners sugar. Garnish with almonds and glazed pumpkin.
