Glazed Fruit Tart Recipe

This glazed fruit tart recipe is loaded with sweet fresh fruit and would be really delicious served with some fresh whipped cream and a great cup of coffee!
1 cup all purpose flour
1/2 teaspoon salt
1/3 cup + 1 Tablespoon butter, at room temperature
2-3 Tablespoons cold water
1 cup cream cheese, at room temperature
2/3 cup granulated sugar
1 1/2 teaspoons vanilla extract
3 Tablespoons heavy cream
1 cup fresh blueberries
1 cup fresh strawberries, sliced
1/4 cup apricot jam
1 Tablespoon water
Serves 6 - 8
Preheat the oven to 475 degrees F.
Have ready a 9 inch pie plate.
In a mixing bowl stir the salt into the flour.
Add the butter and using a pastry cutter or two knives, cut the butter into the flour until it is a fine crumble texture.
Add water one tablespoon at a time stirring in. Just add enough water to form a dough that holds together.
Form a ball from the dough and flatten. Wrap with plastic wrap and place into the refrigerator for 20 minutes.
Remove from the refrigerator and place the dough onto a floured flat surface. Roll out evenly in a circle large enough to fill the pie plate bottom and go up the sides. Fold dough in half, then and transfer into the pie plate. Open up to fill the plate and press the crust down into the pie dish.
Trim the edges even with the top of the pie plate. Pierce the dough several times on the bottom and place into the preheated oven.
Bake for 8-10 minutes or until crust is baked.
Beat together cream cheese, sugar, vanilla and heavy cream until well combined. Spread into prepared crust.
Wash the strawberries and cut into pieces.
Wash the blueberries and let air dry.
Arrange slices on top of cream cheese filling and set aside.
In a small pot melt together apricot jam and water until smooth and runny. Brush a thick layer over top of fruit. Serve.
