Gazpacho is a cool and refreshing chilled soup and is a perfect addition to your next outdoor picnic.
1/2 onion, sliced
2 cloves garlic
3 Tablespoons olive oil
1/4 cup red wine vinegar
2 lbs tomatoes, diced
1 cucumber, diced,seeded
1 green pepper, diced
2 Tablespoons tomato paste
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup chopped cilantro
1/3 cup tomato juice
1/2 teaspoon hot sauce, to taste
Puree first 4 ingredients in processor.
Reserve 1/4 cup each tomatoes, cucumbers, green pepper,
Place all the rest of the ingredients to food processor, pulse until chunky. chill overnight.
Garnish with reserved vegetables and hot sauce to taste.
