Festive Rib Meal Recipe
An awesome rib recipe meal to celebrate!
1 rack of baby-back pork ribs ( membrane removed)
1/2 cup brown sugar
1 tablespoon garlic powder
1 tablespoon cayenne pepper
salt and pepper, to taste
Corn cobs (as many as you want to make)
Salt and pepper
4 large tomatoes
salt and black pepper
4 large tinned anchovy fillets, drained
1 tablespoon freshly chopped parsley
Mix brown sugar, garlic powder, and cayenne together in bowl.
Add salt and pepper if you wish.
Rub spice mixture onto ribs, both sides.
Wrap ribs in aluminum foil, using two sheets of foil.
Place ribs in fridge for at least 24 hours.
Remove ribs when ready to prepare and place in oven on warm.
(My oven goes from warm to 250 degreesF, so I say place on warm, if your oven does have temps. lower than 250 degreesF, I would suggest 200 degreesF Bake ribs on warm for at least 4 hours, up to 6 hours.
Remove ribs, and let them sit in foil, allowing them to cool to almost room temperature.
Place ribs on hot fire, and baste with your favorite sauce.
Let ribs cook on grill for approx 15 minutes or until hot.
Remove ribs and let them rest for approx 10 minutes before serving.
Heat up grill.
Take each sheet of foil and butter with one tbs where corn will be touching.
Roll it and pinch the ends.
Put on grill with medium low flame and turn after five minutes to other side.
Listen for crackling, whereas it might be burning!
Place a large piece of foil on a flat surface and season with the salt and pepper. Drizzle with a bit of oil if youre concerned about the tomatoes sticking.
Halve the tomatoes.
With the cut side up, place the tomatoes on the foil.
Chopp the anchovies and combine with the parsley, a bit of pepper if you like or any other spices.
Divide the chopped anchovies and parsley between each tomato and drizzle each with olive oil.
Bring the edges of the foil up over the tomatoes and fold the edges together, sealing them together to make a parcel.
Place over hot coals for 10-15 minutes or until just softened.
